All alone chasing planes.

I, am a son who is getting ready to have his first birthday and I, am making all of the food myself and I already know what finger foods I want but I don't know how to make chocolate molds, can I just harden the chocolate that is used to make chocolate covered pretzels or do I need to use something else. Also, I have never decorated a cake my self, I know I will be able to do it if I have time, How long do I have before the cake is served before I can start preparing it and it still be moist and good. Will I be able to do it the next day or do I need to wait till the day of. Next, do I need to put any rods or anything in to small, 3 tier cake? Now, I want to say "happy birthday" in little jello letters, Do i need to find jello molds or will i be okay to use cookie cutters after the jello has already cooled and turned solid?
