best way to secure a 2 tier cake

by darcie

Hi my name is darcie and I am making a 2 tier baby shower ckae with fondant. I have already purchased a large cake box big enough for the cake. I would like to know the best way to secure the bottom base so it is secure for transport. Also the best way to keep the fondant fresh and smooth for the next day. There will be very little frosting as decor. Thanks you

You put the largest tier on a very stiff, secure bottom board that is at least 2 to 4" larger than the cake: ie - 10" cake on a 12" or 14" board. If the cake is much larger than 10" round or sq then I suggest you use 2 boards glued together OR use a cake drum (these are 1" thick covered boards one can buy.)
The board should be covered with something that is food safe and non-grease absorbing.
Put a good sized blob of icing (buttercream) on the covered board and put the cake on it befor starting to ice the cake. That should anchor it; holding it on the board just fine.
Ice the cake with b'cream before adding the fondant. Now it should stay smooth and fresh w/o a problem for several days.
