Here are a few cute Easter cakes with bunnies, eggs and flowers for spring.

Easter Basket Cake

Easter basket cakeThis Easter basket cake is a centerpiece cake I did for Easter. It's a two layer carrot cake iced and decorated in a basketweave pattern with cream cheese icing. This basketweave design is done with long strokes going horizontally, which creates a different type of pattern than the usual basketweave piping technique. A shell border finishes the top and bottom edges.

The fun part about this cake is the pastel color cutout Easter egg cookies propped up on top! The cookies were flooded with royal icing. After they dried, more designs were piped on in royal icing.

The basket handle is wire covered with satin ribbon and tied with a pink bow. To finish it off I piped green Easter "grass" around the Easter egg cookies.

Easter Bunny Cupcakes

Easter bunny cupcakesThese Easter bunny cupcakes were adorable and delicious! I baked carrot cake cupcakes, and iced them with cream cheese frosting. The bunny head is a cut-out cookie, and his icing arms are full of candy corn carrots with green icing "leaves". They were a big hit for Easter!

The cookie is decorated in royal icing. First, use the run out technique to cover the whole cookie with white. When it's dry, then you can go back and pipe the ears, eyes, nose and puffy white cheeks.

Spring Easter Sophisticated Cake

spring Easter sophisticated cakeAh Heck, I don't know how to categorize this one. I made it for Easter, but it looks more like a tiny wedding cake. You decide. I just like the way it turned out. It is a chocolate cake with a Swiss meringue buttercream filling covered in fondant. Fondant molded ribbons (I just copied a regular package bow I had as far as number of loops and placement) added a few fondant roses and leaves. That pasta roller was a really nice investment!

Easter Egg Cake

Easter egg cakeJust a standard chocolate cake, then did the star tip for the buttercream icing and the "grass" tip for the grass! Actually used a football cake pan to get the shape of the cake, since I already had one on hand!

Bunny in a Basket Cupcakes

bunny in a basket cupcakesI had a great time creating this little bunny who seems to be peeking out of this little pink basket.

The bunny was traced from the invitation and
used a color flow technique with royal frosting. I used edible markers to finish off the details on the face.

The little basket is a Cupcake Cuddler cupcake holder that was created in four different colors for the finishing touch to the entire display.
