Cake Recipe needed

I am looking for a light fluffy white cake or chocolate
I took classes on decorating but the instructor told us to use box mixes. I have tried different recipes but they always end up heavy and dense. Any suggestions ?

White cake recipe

8 oz of caster suger, butter (very soft room temp)and self raising flour (sift). 4 eggs whisked until well mixed and slightly fluffy.
Steps - cream butter and suger with whisk until light and fluffy, add egg mix a little at a time, whisk high power. At this stage can add 1/2 tsp of vanilla essence. If eggs curdle whilst whisking add a little sifted flour and whisk. Mine never has.Then gently fold in (do not whisk as makes the gluten react and makes cake heavy) sifted flour. Split mix between two lined and greased 9 " cake tins. Spread mixture evenly out. Bake at gas mark 4 for approx 20 - 25 mins i.e when light brown as slightly firm to touch in middle. Note cake should be looked at 17 - 18 mins into baking. This is a very light cake if you fold flour gently rather than mix. Happy baking.

Add an extra egg and two tablespoons of flour to the mix... Makes the cake not taste like a box cake.

Duncan Hines cake mixes

I ONLY use Duncan Hines cake mixes and I get alot of compliments. If you want a white cake, theirs if excellent. You use egg whites so it's very moist and not crumbly.
