Hi, I'm trying to teach myself how to make some of the elaborate cakes, 3D with different types of decorations on them like gum paste and moldeling chocolate, but so far I'm having trouble with when to carve the cake pieces out and what to use to crumb coat them. Do I have to wait till the cake is cold before? Should I crumb coat it before I start to carve and then coat it again?
Also, what is the best frosting to use to coat the cake initially? I've been using a buttercream, but it seems to be pealing the cake with it. So am I not using enough, is it too thick/thin, is the cake not cold enough? I know that's alot of questions all at once, but I've been trying to research it and just havn't been able to find the right links on how the best way to do it is.

Cake is easier to carve when frozen, otherwise it just crumbles apart on you. I would carve it and then crumb coat it with crusting buttercream icing.

I want to make my godchild a house shaped cake. She recently purchased a new home and will have a housewarming so I want to surprise her with a cake made like her house. Can you please help me. I have never did this before.

I always chill my cakes in the freezer for at least 30 minutes before carving. As it warms and becomes sticky, just put it back in the freezer. I use homemade buttercream and coat it in layers, again, chilling between coating. Good luck!

hope I can help You . First are you spraying your pan with an aresol spray ? Some times if you use spray it leaves your cake wet on the edge.but cake won't stick. Or leaving the cake in the pan too long.
I'd freeze my cake before carving makes for a much stiffer surface also I'd frost it after carving . Good Luck/
