Fruit cake

Can u tell me,is it ok to freeze a fruit cake for christening ,as have made lovely Boiled one and am a bit worried it will go mildew if i dont as it is so moist,i have put Brandy in it.If so when should i take it out to decorate please?.

no need to freeze

A fruit cake will generally have a high level of brandy or such and so does not need to be frozen at all, can keep quite happily as long as it is wrapped well, for years, every few weeks or months if keeping it for longer, open it up prick with a fork etc and add more brandy to keep it moist also this will give the cake a rich treacaly texture which is what you want in a fruit cake. I have never frozen my fruit cakes and have very sucessfully kept them for 2 years or more, eg our wedding cake in 2003 used as our sons christening cake in 2005! Hope this helps, remember to wrap it well in cling film or grease proof paper and then in tinfoil, do not miss out the cling film etc as tin foil will stick to the cake!!!

I have just made a fruit cake for a wedding. The write up before the ingredients said that if you wanted to keep a tier for perhaps a Christening or anniversary at a later date. you could freeze it. as long as you first wrap it in a double layer of grease proof paper, and then two layers of tin foil.

I actually kept two tiers of my wedding cake fully iced and well wrapped for 2 years until I had my first child which I then had a tier re marzipan and iced and used it for her christening.
