how to make icing ?

how to make icing ?

Hello. im a beginer and i wanna make icing for cake decorations. icing thats hard when its dry to decorate wedding cake etc. i've already try "royal icing" recipies (egg white, powder sugar and powder tartar or cream of tartar) i follow all the making instructions (mix all ingridients for 10 minutes). after 10 minutes, it seems okay, but the problem is it looks creamy on me, and doesn't look likes its gonna dry and hard. i try to let it sit outside even for an hour and it doesn't dry like it suppose to. can someone please tell me what's wrong with the process and how to make is easy gets hard when its dry. please email me at sugiono_winarso@hotmail.com or sugiono_winarso@yahoo.com

Thank you very much and i appreciate it......
God Bless,..

royal icing is a hard one, first ignore any recipe which tells you how long to mix for! with royal icing you must keep at it with an electric mixer until you can pull up the mixer and the icing pulls up with it, this will happen quite quickly however what you are looking for is that once the peak forms, it does not then melt back down if it does it hasnt been mixed enough keep at it and try again in another few mins, if after a few goes it still isnt staying up any better feel free to add more icing (confectioners) sugar (sifted of course) a small bit at a time mixing well and trying the peaking in between, stick with it it will work with enough mixing! ps to get beautifully white royal icing mix a tiny drop of blue food colour in, sounds strange but it will really make your icing bright white good luck x
