Try wax or parchment paper

I've heard that cake bottoms come out nicer and easier if you add parchment paper or wax paper at the bottom of the pan before you pour in the batter.

two things

first are you letting the cake cool long enough before trying to get it out of the tin? a warm cake in a shaped tin is going to break if you take it out too soon, especially if there is a big gap between top of tin and cooling rack
secondly, when you grease and flour, you need to make sure you use enough grease, i swear by butter, but some have suggested shortening works better, so when you think you have put on enough grease just get another blob and do it again! then when completely and heavily coated put the flour in and make sure that every single area of the cake tin is covvered, no shiny bits at all, and make sure you have a good covering of flour,
these two things together should have your cakes sliding out with complete perfection, but if not (although an expensive way) use wiltons cake release, it is pretty much guaranteed to work every time good luck x

cake release
by: Anonymous

Wilton has a product that is like shortening & flour together. I can't remember what it is called,( I think it's "cake release" ) but any cake store will have it. I always have good luck with this. It also seems to seal it a bit, so you have less crumbs. Use this VERY LIBERALLY and be sure that you are cooling your cake the correct length of time. Good luck! Lisa K
