Hello,

I have some icing moulds and have filled them with royal icing (using dried egg white, water and icing sugar). I have left them for 24 hrs to set but they simply break or stay gooey in the middle. I believe I have got the royal icing recipe right as I was shown by a professional and has been perfect for piping lettering. I let them set in the fridge. Should I use a different recipe (please bear in mind I need a vegetarian recipe). Please help have a birthday cake I would like to use the moulds on!!

I think you need to use fondant icing. Dust the mold with cornflour, then push the fondant into the mold. If it's a silicone mold then use a knife to slice off the excess, then carefully remove the icing.
If you have a hard plastic mold then use the excess icing as a handle to carefully remove the shape from the mold then carefully slice off the excess.
