Victoria Sandwich Ingredients
100g SR Flour
100g soft Butter
100g caster sugar
2 eggs (ROOM TEMP)
Equipment
2x15cm baking tins
grease proof paper
large glass bowl
seive
fork
metal spoon
wooden spoon
This recipe is an all in one cake mixture which is done by creaming all the ingredients together.
1. preheat the oven to 180c / 375f / gas no 4.
2. using a pencil mark round the paper then cut the shape outline your tin with the greaseproof paper pencil side down.
3. Sift the flour and beat the eggs then cream the sugar and butter together until you cannot hear the sugar anymore then add a little drop of egg at a time along with a spoonfull of flour folding it in every time.
4. once all the ingredients have been well mixed then split the mixture into the 2 pre-lined tins.
5. bake in the oven for 20-25 mins you can do the test when the cake is comeing away from the edge of the tin and is springy to touch or if u put a skewer in the center and it comes out clean then the cake is ready.
IF YOU WISH TO DECORATE
You could make up some butter icing
200g icing sugar
50g white fat
50g butter
sift the icing sugar and then mix all the ingredients together. the white fat helps go give a more whiter colour which is better when colouring but all butter would do fine.
you could also decorate your cake with jam or water icing..
