I was reading about one of the cakes that combined the food coloring with vodka and i was wondering why vodka over water?

The reason you add vodka as opposed to water is that the vodka will evaporate quickly. When you paint fondant cakes, the water will make them sticky. Vodka evaporates so quickly that it doesn't do this to the fondant and you get a much better results.

Vodka evaporates faster than water. That way it doesn't mess up the fondant.

vodka is an alchol this will dry faster. Extracts also have alchol in them I use a clear extract depending on what flavor I need usually it's almond, or anise. I hope this helps
