I am making my daughter's wedding cake for end of September. I would like to ice the 5 tier cake on the Friday morning, Saturday would be the wedding. After icing the cake do I need to place it in the refrigerator till the Saturday or can I leave it on the table overnight? The fellowship hall will be kept cold for me to do so.

Another question about the frosting. How much icing would I need to ice the 5 tier cake. The bottom layer being 14", 12", 10", 8", and 6".

Also please tell me exactly how to attach the ribbon on each layer. What is the best ribbon to use?

I would make at least 6 batches of buttercream. That is if you are covering cakes with fondant. I use: Ingredients:
?1/2 cup solid vegetable shortening
?1/2 cup (1 stick) butter or margarine softened
?1 teaspoon clear vanilla extract
?4 cups sifted confectioners' sugar (approximately 1 lb.)
?2 tablespoons milk
Makes: About 3 cups of icing.

If you are just frosting and not covering the cake with fondant make at least 3 additional batches.
If you do not refrigerate your cake make sure the tempeture of your home is at least 68 to 70 degrees. I turned my air on to keep my cake from drooping. It is very important if you cover with fondant to maintain a steady room temp. or the fondant will slide off and that would not be a very good thing, trust me. lol I learned the hard way.
I made my ribbon with fondant and airbrushed it with a metalic airbrush food color. I rolled the fondant out to the lenth I would need to wrap around. I airbrushed it after I placed it on the cake. It is just less messy that way. I put small flower tip on my bag and trimed the ribbon and that also hides any flaws. Let me know if I can answer anything else for you. Good Luck. Mary Neiderlander
