where to get recipies to start a wedding/celebration business

hello, i have wanted to start my own cake business from home for about 2 years now and have never hade much time as i have been working and looking after my child, i have just left for maternity leave and my 1st child is starting school in a few weeks so thought this would be a good time to start. i am having really big problems on finding cake recipies for 14 inch cakes and gluten egg and dairy free cakes and diabetic cakes. i have bought lots of wedding cake books but had no luck, i have 2 books by rachel brown which have recapies and all special diet needs recapies, but they only go up to 12and 13 inch she says if you make them any larger they will flop so make more cakes but you cudn't make 2 separate cakes for one layer, and the special diet needs only go up to 7 and 8 inch, i also dont understand about layers is these recipies for one layer or two its all so confusing and would love some help,and would love to know if there is any cake courses in the north east area where i could get all of these answers and i would be very greatful for and help or ideas thank you for your time melissa x x x x
