Where to start with a group of girls ages 12 to 14 for decorating a fruitcake for a charity event

Hello,

I am a leader with a PAthfinder unit in Girl Guides and they would like to decorate a fruitcake for a charity event in Edmonton. I am not sure where to start in regards to what kind of icing I should use and they would like to "sculpt" figures and scenery. Any adivce or help would be great.
