Peanut Butter and Coconut Icing

Peanut butter and coconut icing tastes great on most cakes, but just think how much the kids will enjoy the peanut butter flavor when frosting a cake filled with jam or jelly. Make it a familiar favorite - a peanut butter and jelly cake - and you can't go wrong.


2 T
1⁄2 c
evaporated milk
1 c
1⁄2 c
peanut butter
1⁄2 c
flaked coconut
1 t
Vanilla Extract


  1. Combine butter, milk and sugar in a saucepan.
  2. Bring to a boil and stir the boiling mixture for two minutes.
  3. Remove from heat and add peanut butter, coconut and vanilla.
  4. Stir until smooth. Frost cake before mixture hardens.
