Margarita Icing

Margarita icing gives a little twist to the typical cream cheese icing recipe, using the juice and zest from key limes. A nice compliment to fruit flavored cakes, but can stand all on its own paired with vanilla cake.

8 oz
cream cheese
2 T
key lime juice
1 t
key lime zest (or lemon zest)
4 c
confectioners sugar (use more for thicker icing)


1. In large bowl, cream butter, cream cheese, juice and zest with electric mixer until light and fluffy.

2. Add 4 cups confectioners' sugar, one cup at a time; continue beating until light and fluffy.

3. If icing is too thin add additional confectioners' sugar 1 tablespoon at a time.
